Braised Beans
Ingredients
- Salt to taste
- Saffron to taste
- Blood Sausage 2 pieces
- Bacon 5 oz
- Smoked pork knuckle 2 pieces
- Serrano Chili 5 oz
- Paprika 1 teaspoon
- Pork Neck 1 piece
- Pork Neck ½ piece
- Olive Oil 5 fl oz
- Garlic 2 cloves
- Onion 1 piece
- White Beans 20 oz
Step-by-Step Guide
Step 1
Soak the beans in cold water overnight or for at least 3 hours. Then rinse under cold water. Place in a pot, cover with water, and bring to a boil over low heat. Remove the pot from heat and drain the water. Place the beans in a clean pot, add cold water to cover all the beans. Add paprika, the onion cut into 4 pieces, garlic, olive oil, pork leg, and ear. Mix well, adding more cold water if needed to cover all components. Bring to a boil over medium heat and cook for 30 minutes.
Step 2
Add the knuckles and chorizo and cook for another 30 minutes. Then add the bacon and cook for another 30-60 minutes, until the beans are soft. Add the blood sausage and cook for another 30 minutes.
Step 3
Remove the knuckle, cut into pieces, and return to the pot. Crush the saffron, mix with two tablespoons of broth, and add the mixture to the pot. Salt to taste and serve.
