Description

If you have leftover fillet, you can break it into pieces and mix it with béchamel sauce. Place everything in a baking dish, sprinkle with grated cheese, and drop a few pieces of butter on top. Bake in a preheated oven at 200 degrees Celsius (about 400 degrees Fahrenheit) for 10–15 minutes until golden brown and serve in the dish.

  • Bonito tuna fillet 5 lbs
  • Semi-Smoked Sausage 0 oz
  • Olive Oil 5 tablespoons
  • Onion 1 head
  • Dry White Wine 10 fl oz
  • Turnips 2 pieces
  • Thyme 1 sprig
  • Salt to taste

Step-by-Step Guide

Step 1

Separate the fish fillet: remove the skin from the tuna, cut out the backbone, and remove any remaining bones from the flesh. Place the two fillets together, lightly season with salt, and cover with strips of bacon. Tie everything together in several places with kitchen twine, as you would for a meat roll.

Step 2

In a large skillet, heat the oil, add the finely chopped onion, and the carrots sliced into rings, and sauté, stirring, for 5 minutes. Now add the fish with bacon to the skillet and continue cooking for a few more minutes, turning the fish once, until golden brown on both sides.

Step 3

Pour in the wine, add the thyme, cover the skillet with a lid, and simmer, stirring occasionally, for another 25 minutes.

Step 4

Remove the fish from the skillet, take off the twine, and discard the bacon and thyme. If the sauce is too thick, dilute it with a small amount of water, then warm it up and pass it through a food mill into a bowl. Slice the fish and serve, drizzling the sauce on top. Boiled potatoes can be served as a side dish.
