Ingredients
- Carrot 2 pieces
- Leek 1 piece
- Lemon 1 piece
- Thyme 4 sprigs
- Parsley 10 stems
- Bay leaf 1 piece
- Green peppercorns ½ teaspoon
- Ground coriander ½ teaspoon
- Coarse Salt 2 tablespoons
- Dry White Wine 10 fl oz
- Smoked haddock fillet 4 pieces
- Sour Cream 5 tablespoons
- Meyer Lemon Juice ¼ tablespoon
- Citrus Zest Mix ¼ tablespoon
- Capers 2 tablespoons
- Chopped Sage Leaves 1 tablespoon
- Tarragon 1 tablespoon
Step-by-Step Guide
Step 1
For the sauce: mix all the ingredients. Store the sauce in the refrigerator until needed.
Step 2
For the salmon: combine the carrot, leek, lemon slices, thyme, parsley, bay leaf, peppercorns, coriander, salt, and wine in a large skillet.
Step 3
Add water to raise the liquid 4 cm from the bottom of the pot. Bring to a boil and reduce the heat. Place the salmon fillets in the skillet. Cover and cook until firm in the center, about 6-8 minutes.
Step 4
Transfer the fish to a plate and cover with something. Cool to room temperature and serve with the lemon, herb, and capers sauce, along with a watercress and cucumber salad.
