  • Oxtail 6 pieces
  • Onion 4 heads
  • Celery salt 4 stalks
  • Thyme 4 pieces
  • Carrot 2 pieces
  • Dry White Wine 0 qt
  • Tomatoes 4 pieces
  • Bay leaf 2 pieces
  • Green peppercorns 12 pieces
  • Lemon 6 pieces
  • Cilantro 5 oz
  • Garlic 2 heads
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cover the beef, veal, oxtails, and pork with enough water to just submerge the meat. When the water reaches a boil, reduce the heat to the lowest setting, skim off any foam, and let it simmer.

Step 2

Peel the onion and carrot, and place them in an oven preheated to 390°F for half an hour. Then transfer them to a pot. Cook for another hour and a half, skimming off the fat.

Step 3

Place the chicken and turkey legs in a pot, boil for another hour, then add celery, wine, tomatoes, thyme, bay leaf, pepper, season with salt, and cook for another hour. Remove from heat, and extract the meat. Strain one liter of broth, mix it with crushed garlic, chopped cilantro, and lemon juice. Pour the sauce over the meat and serve with rice.
