Description

This simplest method of cooking blue crabs is in water, without any seasonings. Some may find the lack of spice fire disappointing, but this method allows you to truly appreciate the delicate flavor of crab meat. If you value the tenderness of crab meat, serve it cooled (at room temperature) a few hours after cooking. Alternatively, you can keep it overnight in the refrigerator and serve it the next day if you enjoy the added flavor of thickened crab juice.

  • Blue Crabs 24 pieces
  • Water to taste

Step-by-Step Guide

Step 1

Place a large pot of salted water on the heat. As quickly as you can, drop all the crabs into the water. It is easiest to boil crabs in a net, or you can use tongs.

Step 2

Cover the pot immediately. Let the crabs cook for 8 minutes.

Step 3

Remove the crabs from the pot and place them in the refrigerator for a few hours (if you prefer them not too cold) or overnight (if you like cold crab meat in thickened crab juice).
