Step-by-Step Guide

Step 1

Trim the tough ends of the asparagus (green or white) by 2 cm and discard. Use a vegetable peeler to remove the skin from the stalks (it's better not to use a knife, as it's easier to damage the flesh and cut away too much), leaving only the very tip intact.

Step 2

In a large pot, bring water to a boil and add a little salt. Cook the asparagus stalks for 4–5 minutes, no longer — they should remain crisp. Drain the water. The asparagus is ready.
