Description

For preparing dishes from Chinese and other similar cuisines, it's important to have all ingredients prepped and chopped in advance. The actual cooking process takes relatively little time compared to proper preparation. In this case, overcooking is much worse than undercooking. Therefore, pay extra attention to the preparation.

Ingredients

  • Black rice (imperial) 1 cup
  • Dried Chinese mushrooms 12 pieces
  • Peanut Butter 2 tablespoons
  • Spanish onions 1 head
  • Broccoli 12 pieces
  • Orange Bell Peppers 1 piece
  • Grated Ginger Root 1 piece (about 3-4 cm)
  • Garlic 4 cloves
  • Carrot 2 pieces
  • Frozen green bean pods ½ cup
  • Soy Sauce 2 tablespoons
  • Sesame Oil 2 tablespoons
  • Rice Vinegar for Sushi 2 tablespoons
  • Brown Sugar 2 teaspoons
  • Cilantro to taste
  • Scallions to taste

Step-by-Step Guide

Step 1

Cook the black rice (or any other rice) according to the package instructions.

Meanwhile:

Soak the shiitake mushrooms in boiling water for 30 minutes, saving the mushroom water.

Step 4

Slice the shiitake mushrooms lengthwise into pieces about 5 mm thick.

Step 5

Peel the piece of ginger (about 3-4 cm long) and cut it into pieces the size of a broken matchstick.

Step 6

Crush the garlic with the flat side of a knife, chop finely, and add it to the ginger.

Step 7

Peel the red onion and slice it into rings. Add it to the garlic and ginger; this part of the preparation is complete.

Step 8

Peel the carrots and cut them in half lengthwise, then into pieces about 5 mm wide. Break the broccoli into florets, removing the tough stem. Remove the seeds from the bell pepper and cut it into pieces the size of the carrot pieces.

Step 9

For the sauce, mix the soy sauce, rice vinegar, sesame oil, and sugar well. You can do this with a whisk or pour everything into a sealed jar, tightly close the lid, and shake well.

Step 10

Heat the peanut or any vegetable oil in a pan and add the shiitake mushrooms, frying on high heat for about 1 minute. Add the mixture of onion, ginger, and garlic and fry for another minute, stirring constantly.

Step 11

Add the bell pepper, carrots, broccoli, and frozen green peas, then pour in the sauce. Mix well.

Step 12

Sauté on high heat, stirring constantly for 3 minutes.

Step 13

Add the cooked rice and mix well, adding ½ cup of the mushroom soaking liquid.

Step 14

Remove from heat. Let it sit for about 3-5 minutes to avoid burning your mouth.

Step 15

Serve garnished with green onions and/or cilantro to taste.
