Black Beans with Sautéed Onions

Ingredients

  • Black Beans 2 cups
  • Vegetable Oil 3 tablespoons
  • Onion 1 head
  • Coarse Salt to taste

Step-by-Step Guide

Step 1

In a medium-sized pot, bring 7 cups of water to a boil, add the beans. Cover with a lid, reduce the heat to low, and cook for about 1 hour until tender. Using a wooden spoon, lightly mash the beans in the pot. Pour the water with the beans into a bowl.

Step 2

Heat a large deep skillet over medium heat, add the oil and sauté the onion for 18-20 minutes until golden brown. Pour the water with the beans into the skillet and simmer, stirring frequently, until the liquid evaporates, about another 15 minutes. Sprinkle with salt.
