Ingredients

  • Onion 1 piece
  • Garlic 3 cloves
  • Potato 1 piece
  • Carrot 1 piece
  • Olive Oil 1 tablespoon
  • Toasted Cumin Seeds ½ teaspoon
  • Mild Chili Spice to taste
  • Shish kebab spice mix 1 teaspoon
  • Turmeric ½ teaspoon
  • Salt 1 teaspoon
  • Pea shoots ½ cup
  • Basmati rice 1 cup
  • Water 2 cups

Step-by-Step Guide

Step 1

Finely chop the onion, garlic, potato, and carrot.

Step 2

In a deep skillet (or pressure cooker, if available), heat the olive oil and add the cumin seeds. Once the oil is heated, add the garlic and onion, along with the biryani spice mix (available at Indian spice stores), and sauté until the onion softens and turns slightly golden.

Step 3

Next, add the potato, carrot, chili powder, turmeric, and salt, mix everything, and sauté for 5 minutes.

Step 4

Finally, add the peas and rice and sauté for about 2 minutes.

Step 5

Then add water (in the ratio of 2 cups of water for 1 cup of rice) and cook to your preference—either simmer with a closed lid, or cook in a rice cooker, which I find preferable, or in a pressure cooker with a closed lid for about 20 minutes.
