Ingredients

  • Shallot 10 oz
  • Pickled Chanterelles 5 oz
  • Sugar 2 tablespoons
  • Red Wine Vinegar 2 tablespoons
  • Rosé Dry Wine 25 fl oz
  • Chicken Broth 15 fl oz
  • Thyme 2 sprigs
  • Campbell's Beef Broth 15 fl oz
  • Green peppercorns 1½ teaspoons
  • Bay leaf 1 piece
  • Butter 1 tablespoon
  • Wheat Flour 1 tablespoon
  • Olive Oil 1 tablespoon
  • Peanut Butter to taste
  • Salad Potatoes 1½ kg
  • Veal Tenderloin 0 lbs
  • Truffle Oil 1 tablespoon

Step-by-Step Guide

Step 1

In a saucepan over medium heat, heat the canola oil. Add the thinly sliced shallots and thinly sliced mushrooms. Sauté until soft, about 12 minutes. Sprinkle with sugar and caramelize for about 4 minutes. Drizzle with vinegar, stir, and let evaporate for about a minute. Pour in the wine and reduce by half over 20 minutes. Add both broths and add thyme, black peppercorns, and bay leaf. Turn to medium heat and simmer for about 35 minutes, stirring occasionally.

Step 2

Strain the sauce through a sieve into a saucepan. In a bowl, mix softened butter and flour. Bring the sauce to a boil and gradually add the butter mixture. Cook for about 5 minutes until the sauce reduces to 1¼ cups.

Step 3

Preheat the oven to 355°F.

Step 4

Season the tenderloin with salt and pepper. Heat olive oil in a skillet over high heat. Add the meat and sear for about 5 minutes until golden brown. Transfer to a baking sheet and roast until medium doneness, about 35 minutes. Transfer to a cutting board, cover with foil, and let rest for 10-15 minutes.

Step 5

Heat 15 cm of peanut oil in a pot over medium heat to 300°F.

Step 6

Peel the potatoes, cut them into strips, rinse well under cold water, and dry with a towel.

Step 7

Fry the potatoes in batches in the hot oil for a few minutes until soft and golden brown. Transfer to a baking sheet and drizzle with truffle oil. Season with salt and mix well.

Step 8

Slice the meat into pieces and serve with French fries, drizzled with sauce.
