Beef with Orange Zest and Fennel Crust
Ingredients
- Breadcrumbs ¼ cup
- Nigella Seeds ½ teaspoon
- Orange zest ½ teaspoon
- Olive Oil 2 tablespoons
- Salt ¾ teaspoon
- Ground Black Pepper ½ teaspoon
- Dijon Mustard 4 teaspoons
- Veal Tenderloin 30 oz

Preheat the oven to 500°F.
Step 2
Mix the breadcrumbs, fennel seeds, orange zest, 1 tablespoon of oil, 0.25 teaspoons of salt, and pepper.
Step 3
Cut the meat into 4 steaks and generously rub with the remaining salt and pepper. Heat a skillet over high heat with the remaining olive oil, but do not let it smoke. Place the meat in the skillet and sear for 3-4 minutes on each side. Remove from heat.
Step 4
Spread 1 tablespoon of mustard on each piece of meat and sprinkle with the breadcrumb mixture. Place the skillet in the oven and cook, without flipping, for 5 minutes for medium doneness.
