Beef with Cucumbers and Quinoa

Ingredients

  • Quinoa 5 oz
  • Lean Beef 20 oz
  • Cucumbers 5 oz
  • Orange Bell Peppers 15 oz
  • Garlic 0 oz
  • Shallot 5 oz
  • Olive Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Herbs to taste

Step-by-Step Guide

Step 1

Cut the meat into very thin small strips. Mix the meat with crushed garlic, a small amount of olive oil, and season with salt and pepper.

Step 2

Cook the quinoa over low heat for 12–15 minutes, until the seeds are cooked and fluffy.

Step 3

Slice the shallots into thin strips. Peel the cucumber and remove the seeds, then cut it into thin long strips. Chop the bell pepper into small cubes.

Step 4

In a well-heated skillet, pour in the oil and sauté the meat for 1 minute until golden brown, but do not overcook.

Step 5

Add the shallots and sauté for another 30 seconds.

Step 6

Add the sliced cucumber and sauté for about 30 seconds until the cucumber becomes soft.

Step 7

Add the bell pepper and sauté for another 30 seconds.

Step 8

Add the cooked quinoa and mix everything thoroughly. Serve on a plate and garnish with herbs, I use parsley.
