  • Ground ancho chili pepper 1 tablespoon
  • Veal Tenderloin 20 oz
  • Cocoa Powder 2 teaspoons
  • Ground Cinnamon ½ teaspoon
  • Mixed salad greens 3 cups
  • Tortillas 8 pieces
  • Vegetable Oil 1 tablespoon

Step-by-Step Guide

Step 1

Sprinkle the beef tenderloin steak with salt, then with the mixture of ancho chili, cocoa, and cinnamon.

Step 2

Sear the meat on both sides in olive oil in a shallow pan over medium-high heat (about 5–7 minutes).

Step 3

While the meat is cooking, wrap 8 tortillas in foil and heat them in the oven at 345°F.

Step 4

Place the cooked meat on a cutting board, cover with foil, and let it rest for 5 minutes. Then slice it thinly against the grain.

Step 5

Serve the meat with warm tortillas, mixed salad greens, pickled jalapeño peppers, sour cream, and lime wedges.
