Beef Tenderloin with Onion-Orange Appetizer

Ingredients

  • Honey 1 tablespoon
  • Champagne Vinegar 3 tablespoons
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Olive Oil ¼ cup
  • Garlic 2 cloves
  • Spanish onions ½ head
  • Pitted olives 0.3 cup
  • Chopped Sage Leaves ¼ cup
  • Oranges 1 piece
  • Veal Tenderloin 25 oz

Step-by-Step Guide

Step 1

In a small bowl, mix honey and vinegar. Season with salt and pepper. Then, while whisking constantly, add the olive oil. Add finely chopped red onion, minced garlic, sliced olives, orange segments peeled and cut into small pieces, and parsley.

Step 2

Season the meat well with salt and pepper.

Step 3

Take a skillet and place it over high heat. Heat well and add a little vegetable oil. Place the meat in the skillet and fry for 6–8 minutes on each side for medium doneness. Transfer to a plate and cover with foil. Let it rest for 10 minutes.

Step 4

Slice the meat into pieces and top with the onion-orange appetizer.
