Ingredients
- Grated Pecorino Pepato Cheese 2 tablespoons
- Veal Tenderloin 5 lbs
- Ground Black Pepper ½ teaspoon
- Herbes de Provence 1 teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F. Mix the Herbes de Provence and black pepper, and rub the mixture onto the meat. Place it on a baking sheet. Do not cover or add water. Bake in the oven for 45-50 minutes for medium doneness.
Step 2
Remove the meat when the internal temperature reaches 60-160°F. Sprinkle with Parmesan and let it rest for 15 minutes.
Step 3
Slice the meat into small pieces, season with salt, and serve.
