Ingredients

  • Butter 0 oz
  • Wheat Flour 2 tablespoons
  • Chicken Broth 1 cup
  • Sour Cream 2½ tablespoons
  • Onion 1 head
  • Beef 25 oz
  • Salt to taste
  • Green peppercorns to taste
  • Salad Potatoes 4 pieces
  • Vegetable Oil 10 fl oz
  • Parsley 0 oz
  • English Dry Mustard 1 teaspoon

Step-by-Step Guide

Step 1

Heat the butter in a skillet over medium heat. Add the flour and dry mustard.

Step 2

Sauté, stirring, for 2 minutes. Gradually add the broth, stirring constantly until it comes to a boil. Cook for a couple more minutes. Add the sour cream, remove from heat, and set aside.

Step 3

In the remaining oil, sauté the finely chopped onion until lightly golden. Increase the heat, add the meat cut into 3x1 cm strips, and fry until golden brown. Reduce the heat to low, add the sauce, and season with salt and pepper to taste. Cover and cook for about 20 minutes.

Step 4

Meanwhile, cut the potatoes into thin strips. Heat frying oil in a deep skillet and fry the potatoes. Place the potatoes on paper towels and season with salt while still hot.

Step 5

To serve, place the beef stroganoff on a plate and top with the fried potato strips. Garnish with parsley.
