Beef Stroganoff
Ingredients
- Beef 20 oz
- Aspen mushrooms 5 oz
- 20% Sour Cream 5 oz
- Cream (40%) 5 fl oz
- Onion 1 piece
- Butter 0 oz
- Vegetable Oil 0 fl oz
- Nutmeg a pinch
- Dijon Mustard 1 teaspoon
- Cognac 0 oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut the meat into fillets about 1 cm thick.
Step 2
Wrap in plastic wrap and pound well.
Step 3
Slice the pounded fillet into thin slices, season with salt and pepper, coat in flour, and fry in a mixture of butter and vegetable oil in small batches for 2-3 minutes each. Place in a separate container, cover, and set aside.
Step 4
Slice the onion into half rings and sauté in vegetable oil, then add to the meat.
Step 5
For the sauce: rinse the white mushrooms well, dry them, and cut into strips. Sauté in a pan with vegetable oil, add cognac and flambé, then add cream, nutmeg, mustard, pepper, salt, and sour cream. Mix and simmer for 1-2 minutes.
Step 6
Pour the sauce over the meat in the pot, mix, and simmer on low heat for 5-7 minutes, then serve with a side dish.
