Beef stewed with spices
Ingredients
- Beef 35 oz
- Garlic 1 head
- Thyme 5 pieces
- Parsley 5 stems
- Celery salt 1 stalk
- Green peppercorns 5 pieces
- Dry White Wine 5 fl oz
- Water 10 fl oz
- Salt to taste
- Tagine Spice Mix to taste
- Olive Oil 3 tablespoons
- Star anise 1 piece
Step-by-Step Guide
Step 1
Wash the meat, dry it, and stuff it with 3-4 cloves of garlic, cut in half and coated in salt.
Step 2
Mix the oil, salt, and spices separately. Rub this mixture onto the meat.
Step 3
In a pot, place all the herbs, remaining garlic, pepper, pour in the wine and water, and bring to a boil. I like to add star anise.
Step 4
Add the meat, cover tightly with a lid, and set on the lowest heat.
Step 5
Stew for 2-2.5 hours, turning the meat occasionally. Monitor the liquid level; if it evaporates, add boiling water.
Step 6
Place the meat on a wooden board, cover with foil and a kitchen towel. Let it rest for 15-20 minutes.
