Ingredients

  • Veal Tenderloin 0 lbs
  • Salt to taste
  • Ground Black Pepper to taste
  • Wheat Flour 1 cup
  • Salted Butter 4 tablespoons
  • Bacon 4 pieces
  • Garlic 6 cloves
  • Onion 3 heads
  • Dark Ale 2 cups
  • Campbell's Beef Broth 1 cup
  • Brown Sugar 2 tablespoons
  • Apple Cider Vinegar 2 tablespoons
  • Thyme 3 sprigs
  • Parsley 3 sprigs
  • Tarragon 2 sprigs
  • Bay leaf 0 oz
  • White bread to taste

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Cut the beef into fairly large pieces, place in a dish, and season with salt and pepper.

Step 3

Dredge the pieces in flour.

Step 4

In a pot, melt 2 tablespoons of butter over medium heat.

Step 5

Brown the pieces of meat in small batches.

Step 6

Transfer the browned meat to a dish.

Step 7

Finely chop the bacon slices and cook until the fat is rendered.

Step 8

Add the remaining butter, finely chopped garlic, and onion.

Step 9

Sauté for about 30 minutes until the garlic and onion are slightly caramelized.

Step 10

Pour in half of the ale (dark beer) and cook for about 4 minutes, scraping the bits stuck to the bottom.

Then return the browned beef to the pot, pour in the beer and broth, add sugar, vinegar, sprigs of thyme, parsley, and tarragon, and the bay leaf.

Season with salt and pepper.

Bring to a boil and continue to cook over medium heat for 1 1/2 hours.

Serve the finished meat with bread.
