For some, carrots seem out of place, so they might put them in whole and remove them before serving, while others cut them into pieces to ensure every bowl has some root vegetable. Some use Italian passata sauce, while others think tomatoes are unimportant. Regardless of these variations, you will end up with beef stew—a hearty and tasty dish. To cook it, a good heavy-bottomed pot is essential, as it helps prevent the food from burning and ensures the potatoes cook thoroughly.
Ingredients
- Beef 20 oz
- Potato 30 oz
- Carrot 1 piece
- Onion 1 head
- Passata Tomato Sauce 10 oz
- Bay leaf 1 piece
- Green peppercorns 5 pieces
- Herbs to taste
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil 5 fl oz
Step-by-Step Guide
Step 1
In a thick-walled pot or a Dutch oven, heat vegetable oil and sauté the beef cut into bite-sized pieces. It's best to fry in small batches; otherwise, the meat will start to stew.
Step 2
Pour a quarter cup of water into the meat, season with salt and pepper, cover with a lid, and simmer over low heat for 40 minutes.
Step 3
Slice the onion and carrot into half-rings, add them to the meat, stir, and sauté for 5 minutes.
Step 4
Add the passata, stir, cover with a lid, and simmer for another 30 minutes.
Step 5
Cut the potatoes into large pieces and fry them in a separate pan with vegetable oil until they are golden brown on the sides.
Step 6
Add the potatoes to the meat, then add the bay leaf and whole peppercorns. Season with salt and pepper to taste. Stir, cover with a lid, and simmer for 10-15 minutes until the potatoes are cooked through. Serve the stew garnished with fresh herbs.
