This sauce pairs wonderfully with roasted lamb, pork chops, and chicken breast. Just substitute beef broth with lamb, vegetable, or chicken broth as needed.

  • Steaks 4 pieces
  • Campbell's Beef Broth 5 fl oz
  • Madeira 5 fl oz
  • Cream 5 fl oz
  • Vegetable Oil 1 tablespoon
  • Dijon Mustard 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat the oil in a skillet and add the steaks. Cook for 2.5 minutes on each side for rare, or 3.5 minutes for medium. Transfer to a warm plate, cover with foil, and let rest for 10 minutes.

Step 2

For the sauce: Pour the Madeira into the skillet used for the meat, bring to a simmer over low heat, add the broth, and cook for 4-5 minutes. Stir in the cream, cook for another 1-2 minutes, add the mustard, and season with salt and pepper if needed. Mix well and remove from heat.

Step 3

Serve the steaks with a side of seasonal vegetables, drizzled with the hot Madeira sauce.
