  • Olive Oil 1 teaspoon
  • Butter 1 teaspoon
  • Shallot 1 piece
  • Danish Blue Cheese 1 tablespoon
  • Cream ¼ cup
  • Fresh basil leaves 5 oz
  • Meyer Lemon Juice 1½ teaspoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Pat the meat dry and rub with 0.5 teaspoon of salt and 0.25 teaspoon of pepper.

Step 2

Heat the butter and olive oil in a large skillet over medium heat and add the meat. Cook for about 7-10 minutes for medium doneness, flipping once. Transfer to a cutting board and let rest, uncovered, for 10 minutes.

Step 3

In the skillet, add the thinly sliced shallot and sauté until soft, about 3 minutes. Add the cream, cheese, and spinach, and cook, stirring, until the spinach is wilted, about 2 minutes. Add lemon juice, salt, and pepper to taste.

Step 4

Slice the meat thinly and serve with the spinach.
