  • Lamb Neck Fillet 20 oz
  • Worcestershire Sauce 1 teaspoon
  • Shallot 1 head
  • Garlic 1 clove
  • Fresh Mushrooms 1 cup
  • Meyer Lemon Juice 1 tablespoon
  • Mustard Greens 1 teaspoon
  • Heavy cream 5 fl oz
  • Onion 0 oz
  • Brandy 5 oz
  • Chopped Sage Leaves 1 teaspoon
  • Parsley 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat a tablespoon of butter in a skillet over medium heat. Add the steaks with a little salt and pepper and cook for 2 minutes on each side. Place on a plate and put in the freezer for 5 minutes.

Step 2

Reheat the butter in the skillet, add the Worcestershire sauce, chopped shallot, garlic, and mushrooms. Sauté for 2 minutes, seasoning with lemon juice, salt, and pepper. Add the steaks, thyme, parsley, and mustard. Cook the meat to your liking.

Step 3

Add the heavy cream and the crushed clove of garlic. Tilt the skillet slightly and pour the brandy over the meat. Increase the heat and let it catch the brandy fumes — after a while, remove from heat.

Step 4

Serve the steaks on plates drizzled with the mushroom sauce.
