Ingredients
- Cilantro 1 bunch
- Garlic 3 cloves
- Scallions 3 stalks
- Habanero Pepper 1 piece
- Ground Cumin ½ teaspoon
- Lime Juice 1 tablespoon
- Beef 30 oz
- Vegetable Oil 0 fl oz
- Salt 1 teaspoon
- Sugar ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Blend the cilantro, garlic, green onion, jalapeño, and cumin in a blender, add vegetable oil, and achieve a smooth paste consistency. Mix 2 tablespoons of the paste with lime juice.
Step 2
Cut the beef into strips, pierce several times with a fork, transfer to a bowl, season with salt, cover with the remaining paste, wrap in plastic wrap, and refrigerate for 30–60 minutes.
Step 3
Remove the paste from the steak, sprinkle with pepper and sugar, and sear on all sides over medium-high heat until the meat reaches 130°F.
Step 4
Slice the meat into thin pieces, mix with the dressing, and serve with other toppings on corn tortillas.
