
Beef Rolls with Bacon

Description
A hearty dish from Latvian cuisine and one of the variations on the theme of Karlovy Vary rolls — a traditional Czech appetizer. In the classic recipe, thinly sliced meat is rolled with bacon, omelet, and pickles, served with potatoes. This version contains fewer ingredients but is not lower in calories, so it’s best to choose a light accompaniment: a green salad or any vegetable salad will not overwhelm the dish, only enhance its appearance and your taste experience.
Ingredients
- Onion 2 heads
- Escalopes 6 pieces
- Pork fat 5 oz
- Safflower Oil 2 tablespoons
- Water ½ liter
- Salt to taste
- Sour Cream 5 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pound the escalope, season with salt and pepper. Cut the onion and fat into strips. Place some onion and fat on the escalope, roll it up, and tie it with string or secure it with a skewer.
Step 2
Fry the rolls on each side in a skillet with sunflower oil.
Step 3
Transfer the fried rolls to a pot, pour in water, add sour cream, and season with salt and pepper.
Step 4
Simmer for 30–40 minutes. Add a bay leaf 5 minutes before cooking is complete. Before serving, remove the strings and skewers.
