Beef Roll-Ups with Bell Pepper Filling
Ingredients
- Vegetable Oil 2 tablespoons
- Soy Sauce 3 tablespoons
- Orange Bell Peppers 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
- Scallions 4 stalks
- Veal Tenderloin 20 oz
- Rice Vinegar for Sushi 2 tablespoons
- Sugar 2 teaspoons
Step-by-Step Guide
Step 1
In vegetable oil, sauté the sliced bell pepper until soft. Add 1 tablespoon of soy sauce. Transfer to a plate and set aside.
Step 2
Slice the beef into thin pieces, place each piece between plastic wrap, and gently pound to a thickness of 0.5 cm. Season with salt and pepper.
Step 3
Place a few strips of bell pepper and some green onion stalks (to taste) in the center of each pounded beef slice and tightly roll them up, securing with a toothpick.
Step 4
Heat oil in a skillet over high heat and sear the meat on all sides until beautifully golden brown. Transfer to a serving dish.
Step 5
In the same skillet, pour in 2 tablespoons of water, the remaining 2 tablespoons of soy sauce, vinegar, and add sugar. Cook over medium heat, stirring, until the sauce reduces, about 5 to 7 minutes.
Step 6
Remove the toothpicks from the rolls and drizzle with the hot sauce.
