Beef Pörkölt
Ingredients
- Fatty Beef 10 oz
- Onion ½ piece
- Leek 0 oz
- Marinated cherries 8 pieces
- Ginger 0 oz
- Arugula 1 bunch
- Garlic 5 cloves
- Cream 22% 5 oz
- Green peppercorns 1 piece
- Eggplants ½ piece
- Olive Oil 5 tablespoons
- Butter 2 pieces
- Ground Black Pepper 1 teaspoon
- Mild Chili Spice to taste
- Salt to taste
Step-by-Step Guide
Step 1
Chop both types of onion coarsely.
Step 2
Crush the garlic with a chef's knife and finely chop the ginger.
Step 3
In a heated pan, add 2 tablespoons of mustard oil and a piece of butter, then add the ginger and garlic.
Step 4
Once the ingredients are browned, transfer them to a separate dish.
Step 5
In the same oil, sauté both types of onion until golden brown. Then transfer them to the dish with ginger and garlic.
Step 6
Chop the eggplant, pepper, and tomatoes coarsely. Salt the tomatoes.
Step 7
Add the tomatoes to the pan.
Step 8
Once they soften halfway, add them to the rest of the sautéed mixture.
Step 9
Add the pepper and eggplant to the pan. Add another piece of butter and a tablespoon of mustard oil.
Step 10
After 3-4 minutes, stir and salt. Reduce the heat to medium.
Step 11
After 5 minutes, transfer to the other sautéed ingredients.
Step 12
Pour in another 2 tablespoons of mustard oil and add the coarsely chopped meat. Sauté over high heat.
Step 13
After 3-4 minutes, reduce the heat to medium. Salt and pepper to taste.
Step 14
After 1 minute, cover with a lid.
Step 15
After 5 minutes, add all the sautéed mixture and chopped arugula. Stir.
Step 16
Pour in the cream. Adjust salt to taste.
Step 17
Add chili. Stir.
Step 18
Once the cream begins to boil, remove from heat and transfer to a deep dish. Ready!
