Ingredients
- Beef 30 oz
- Olive Oil 1 tablespoon
- Olive Oil 1 teaspoon
- Dijon Mustard 1 tablespoon
- Dijon Mustard 1 teaspoon
- Herbes de Provence 1 teaspoon
- Red Wine Vinegar 1 teaspoon
- Champagne Vinegar 1 teaspoon
- Pink Himalayan Salt to taste
Step-by-Step Guide

Prepare the ingredients.
Step 2
For the sauce, pour the extra virgin olive oil into a deep bowl. Add the herbs to the oil.
Step 3
Add the mustard to the oil.
Step 4
Add the grainy mustard.
Step 5
Add both types of vinegar to the sauce.
Step 6
Heat the olive oil in a skillet. Place the meat in the skillet.
Step 7
Sear the meat until browned on both sides over high heat.
Step 8
Once the meat is browned, remove from heat and let it cool slightly. Then cut into medallions.
Step 9
Place the medallions in the skillet. Sear for 2–3 minutes.
Step 10
Flip the medallions, reduce the heat to medium, and sear for another 5 minutes.
Step 11
Mix the sauce thoroughly.
Step 12
Place the medallions on a plate. Season with large crystals of salt.
Step 13
Add the sauce and serve.
