Beef Medallions
Ingredients
- Thick Beef Rib 15 oz
- Lemon-Pepper Mix 1 teaspoon
- Flaky sea salt ½ teaspoon
- Sumac 1 teaspoon
- Olive Oil 1 tablespoon
- Chili jam to taste
- Olive Oil 1½ teaspoons
- Pink Himalayan Salt to taste
Step-by-Step Guide
Step 1
Place sumac, whole pepper mix, and salt into a mortar.
Step 2
Grind it down.
Step 3
Brush the beef with mustard oil.
Step 4
Sprinkle the ground spice mixture over it.
Step 5
Place it on a preheated skillet and sear on all sides for 1–2 minutes over high heat.
Step 6
Remove the meat from the skillet and let it cool for a couple of minutes.
Step 7
Slice the meat into medallions.
Step 8
Heat olive oil in the skillet.
Step 9
Add the medallions and sauté over medium heat for 2–3 minutes.
Step 10
Flip and sauté for another 2–3 minutes.
Step 11
Place the medallions on a plate and add chili sauce.
Step 12
Sprinkle with coarse salt and serve.
