Step-by-Step Guide
Step 1
Trim the beef well, removing any sinews, membranes, and excess fat. It's best to use the chuck part.
Step 2
Let the meat rest, then briefly place it in the freezer. This helps the meat become more manageable during shaping and prevents it from falling apart on the skewer.
Step 3
Cut the onion, meat, and fat into cubes.
Step 4
Pass the ingredients through a meat grinder using the coarse plate.
Step 5
Mix everything well and beat it thoroughly so that the meat releases its juices and adheres better to the skewer.
Step 6
Place the meat in the refrigerator and let it rest for 2 hours.
Step 7
Prepare the grill and heat the coals.
Step 8
Moisten your hands with warm water, take about 200 grams of ground meat, shape it into a small sausage, and thread it onto a skewer.
Step 9
Carefully shape the filling along the skewer, tapering the width at both ends to prevent the meat from falling into the coals.
Step 10
Turn the skewer every 20 seconds until cooked through.
Step 11
Serve the lula kebab with pickled onions, lavash, adjika, and your favorite vegetables.
