Beef in Guinness with Celery Puree
Ingredients
- Vegetable Oil 1 tablespoon
- Beef 0 lbs
- Onion 2 heads
- Garlic 1 clove
- Brown Sugar 2 teaspoons
- Wheat Flour 2 teaspoons
- Guinness Beer 5 fl oz
- Campbell's Beef Broth 15 fl oz
- Fresh Bay Leaf 1 piece
- Thyme 2 sprigs
- Celery salt 1 piece
- Potato 1 piece
- Milk 10 fl oz
- Butter 0 oz
- French Baguette 1 piece
- Dijon Mustard 1 teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Heat half of the vegetable oil in a skillet. Cut the beef into cubes and sear the meat until browned. Add more oil if necessary. Transfer the meat to a casserole dish.
Step 2
Finely chop the onion, place it in the skillet, and sauté over low heat. When the onion starts to turn golden, add the crushed garlic clove and brown sugar. Cook until the onion is brown. Add the flour and mix, then transfer to the pot with the meat.
Step 3
Pour the Guinness and broth into the pot, bring to a boil, and pour this mixture over the meat. Add the bay leaf and thyme, and season with salt. Bring to a boil, cover, and place the pot in the oven for 2 hours.
Step 4
Peel the celery, chop it, and place it in a bowl of water. Peel the potato and cut it into cubes. Place the potato and celery in the pot, pour in the milk, and bring to a boil. Cover and cook for 15 minutes, then stir well. Season with salt and add the butter.
Step 5
Slice the bread and spread Dijon mustard on it, then top with the beef. Serve with celery puree.
