Ingredients

  • Olive Oil 0 fl oz
  • Garlic 6 cloves
  • Mild Chili Spice 0 oz
  • Grated Ginger Root 0 oz
  • Scallions 0 oz
  • Beef Cheeks 1½ kg
  • Wheat Flour 2 spoons
  • Chinese Five Spice 1 tablespoon
  • Star anise 2 pieces
  • Muscovado Sugar 2 spoons
  • Medium-dry sherry 3 spoons
  • Soy Sauce 3 spoons
  • Campbell's Beef Broth 15 fl oz
  • Pak choi salad 5 bunches

Step-by-Step Guide

Step 1

Sauté the minced garlic, onion, chili, and grated ginger in two tablespoons of oil in a pot, then remove them. In the same pot, add the cheeks, which have been trimmed of membranes and dusted with flour, and sauté them as well.

Step 2

Add the five-spice powder and sugar, then incorporate the anise and ginger-onion mixture. Pour in the wine and let it simmer to reduce.

Step 3

Pour in the broth and add soy sauce. Simmer for 1.5 to 2 hours, stirring occasionally, until the meat is tender.

Step 4

Blanch the bok choy. Arrange the beef on plates and serve it with the bok choy (or steamed rice).
