Description

This dish has many variations! Experiment! Using the chow mein method, you can also prepare other types of meat, such as chicken or pork. I also love it with turkey.

Ingredients

  • Beef 5 oz
  • Corn Starch 1 teaspoon
  • Dried Chinese mushrooms 3 pieces
  • Egg noodles for wok 5 oz
  • Orange Bell Peppers 1 piece
  • Vegetable Oil 3 tablespoons
  • Snap Peas 0 oz
  • Brown Sugar 1 teaspoon
  • Soy Sauce 3 tablespoons
  • Mirin 2 tablespoons
  • Sesame Oil 3 teaspoons
  • Peanut Sprouts 5 oz
  • Scallions 2 heads

Step-by-Step Guide

Step 1

Cut the beef into thin strips and place it in a bowl. Add cornstarch, 1 tablespoon of rice wine, and 1 teaspoon of sesame oil, mix well, and let it sit in a cool place for 1 hour. Soak the shiitake mushrooms in boiling water.

Step 2

Meanwhile, cook the noodles, but do not cook them fully — usually about 2 minutes. Drain in a colander, let the water drain, and mix with 1 teaspoon of sesame oil.

Step 3

Clean the bell pepper and cut it into thin strips. Rinse the snap peas and dry them on a towel. Cut the white part of the green onions into 2 cm strips, and slice the remaining green part into thin rings and set aside. Remove the mushrooms from the water and slice them into thin strips.

Step 4

Heat the wok to 410°F, add 2 tablespoons of oil. Stir-fry the beef, then add the bell pepper, snap peas, onions, and mushrooms, and stir-fry for about 1 minute, constantly stirring. Then add the sugar, the remaining rice wine, and 2 tablespoons of soy sauce, and stir-fry everything for 2 minutes. Add the mung bean sprouts and stir-fry for another 2 minutes. Remove from the wok and keep warm.

Step 5

Wipe the wok with a dry paper towel, then add the remaining oil and stir-fry the noodles, adding the remaining soy sauce.

Step 6

Place the noodles on a plate, top with the beef and vegetable mixture, and sprinkle with green onions.
