Beef Chateaubriand
Ingredients
- Olive Oil 3 tablespoons
- Veal Tenderloin 20 oz
- Salt to taste
- Ground Black Pepper to taste
- Butter 2 tablespoons
- Thyme 4 sprigs
- Garlic 4 cloves
Step-by-Step Guide
Step 1
Generously coat the piece of beef tenderloin with olive oil, season with salt and pepper. In a heavy-bottomed skillet, heat the remaining olive oil well, add the meat, and sear on all sides until golden brown for about 5-6 minutes.
Step 2
Add butter, thyme sprigs, and unpeeled garlic to the skillet, sauté for 2-3 minutes. Transfer the meat with the seasonings to a baking sheet or baking dish.
Step 3
Preheat the oven to 200-430°F (about 400-425 degrees Fahrenheit), place the dish with the beef inside for 10 minutes, turning the meat every 2-3 minutes and basting with the juices.
Step 4
Place the meat on a rack, allow the juices to drain and let it cool slightly. Slice against the grain with a sharp knife. Sprinkle with salt and coarsely ground black pepper and serve.
