Beef Brisket with Parsley and Garlic Sauce

Ingredients

  • Beef chuck roast 25 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Olive Oil 5 fl oz
  • Garlic 2 cloves
  • Parsley 10 oz
  • Fresh basil leaves 3 tablespoons
  • Champagne Vinegar 3 tablespoons
  • Chili Flakes 0.5 teaspoons

Step-by-Step Guide

Step 1

Generously rub the meat on both sides with salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Place the meat in the skillet and sear for 5–8 minutes on each side for medium doneness. Transfer to a cutting board, cover with foil, and let rest for 10 minutes.

Step 3

Meanwhile, make the sauce. In a blender, combine the remaining olive oil (about 60 ml), minced garlic, parsley, oregano, vinegar, red pepper flakes, 3 tablespoons of water, and 0.5 teaspoons of salt. Blend until smooth.

Step 4

Slice the meat into pieces and serve with the sauce.
