Description

Recipe from a local pub. To achieve the dish as envisioned by Chef Victor, you first need to find good meat, ideally marbled beef. Secondly, don't skimp on the spices — the recipe uses ginger, barberry, garlic, rosemary, and black pepper. Finally, for serving, choose a round artisanal wheat bread with a thick crust. Step-by-Step Guide

Step 1

Cut the beef diaphragm, removing all connective tissue, and chop it into pieces about 4 cm in size. Sear the beef in a pan, lightly season with salt and pepper, then transfer it to a pot and cover with water, ensuring it is 2 cm above the meat. Bring to a boil and skim off any foam. Add grated ginger, sliced garlic, a sprig of rosemary, salt, sugar, and barberries. Cover and simmer on low heat for 1 hour.

Step 2

Slice the onion into thin strips, the carrot into half-moons, and the mushrooms into wedges. Combine all the vegetables and sauté them lightly in oil.

Step 3

When the meat is almost cooked, add the sautéed vegetables and mushrooms, and simmer for another 20 minutes until the meat is fully cooked. Season to taste with spices.

Step 4

Before serving, add thawed green peas, segments of orange, cream, and warm everything through.

Step 5

Cut off the top of the bread and remove the inside; it will not be needed anymore. However, the cut-off top should be saved and used for serving. Toast the prepared bread in the oven at 355°F for 5 minutes until it has a crispy crust. Ideally, the bread should be homemade, straight from the oven.

Step 6

Serve as follows: place toasted bread on a plate, top it with braised beef alongside warmed vegetables and orange in cream, cover it with the top of the bread, and garnish with cherry tomatoes.
