Beef and Vegetable Skewers
Ingredients
- Olive Oil 1 tablespoon
- Fresh Rose Hips 1 teaspoon
- Garlic 3 cloves
- Coarse Salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Veal Tenderloin 20 oz
- Meyer Lemon Juice 2 teaspoons
- Marinated cherries 15 oz
- Spanish onions 1 head
- Orange Bell Peppers 1 piece
- Fresh Mushrooms 10 oz
- Broccoli 10 oz
- Cucumbers 6 pieces
Step-by-Step Guide
Step 1
In a bag, mix 2 teaspoons of olive oil, chopped rosemary, and minced garlic. Add the meat cut into small pieces, mix well, seal tightly, and refrigerate for 1 hour. Remove the meat from the marinade, thread onto skewers, and sprinkle with half of the salt and pepper.
Step 2
In a large bowl, combine the remaining olive oil and lemon juice. Add the cherry tomatoes, diced yellow bell pepper, chopped red onion, cucumbers, broccoli florets, and mushrooms. Toss to combine. Thread the peppers, onion, tomatoes, and mushrooms separately onto skewers so that the cooked vegetables can be removed in time during grilling. Sprinkle with the remaining salt and pepper.
Step 3
Place all the skewers on the grill. Grill the peppers and onion for 10 minutes until cooked. Grill the meat for 9 minutes or until done. Grill the tomatoes and mushrooms for about 7 minutes.
