Description

There were no fresh bell peppers available — I used dried ones.

Ingredients

  • Beans 1 cup
  • Onion ½ head
  • Orange Bell Peppers 2 pieces
  • Carrot 1½ pieces
  • Tomatoes 2 pieces
  • Bay leaf 2 pieces
  • Black Cumin (Cumin) to taste
  • Coriander essential oil to taste
  • Olive Oil to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Soak the beans overnight, then boil them almost until cooked with the bay leaf. Grate the carrot, chop the onion, and slice the bell pepper.

Step 2

Sauté the vegetables with a small amount of water for about 5–7 minutes.

Step 3

Crush the coriander and cumin in a mortar, add salt to taste, and optionally, pepper. Add the beans and cook for another 10 minutes. Add the chopped tomatoes, stir, and if necessary, add more salt.

Step 4

Turn off the heat and let it sit for 5–10 minutes. Before serving, drizzle with olive oil.
