  • Parsley 3 stems
  • Chinese green beans 5 lbs
  • Salt to taste
  • Safflower Oil 3 tablespoons
  • Onion 1 head
  • Tomatoes 25 oz
  • Sugar 1 teaspoon

Step-by-Step Guide

Step 1

Prepare the tomato sauce: blanch the tomatoes, peel them, and chop finely. Heat the oil in a skillet and add the finely chopped onion, cooking for 5 minutes over low heat. Then add the tomatoes and cook for another 15 minutes, mashing them with a spatula. Let the sauce cool slightly, blend it into a puree, and add the sugar.

Step 2

Bring salted water to a boil in a large pot. Add the beans and bring to a boil again, then cook uncovered for 10 minutes. Drain the water and return the beans to the pot.

Step 3

Pour the tomato sauce over the beans, stir, and cook over low heat for 10 minutes until the beans are tender. Sprinkle with finely chopped parsley and serve.
