Description

Stew, or khoresh, is a type of semi-sauce semi-stew that is served with festive saffron rice.

  • Beef 20 oz
  • Tomatoes 20 oz
  • Chinese green beans 20 oz
  • Passata Tomato Sauce 2 spoons
  • Spanish onions 2 heads
  • Ground Cinnamon 1 tablespoon
  • Vegetable Oil 0 fl oz
  • Ghee 0 oz
  • Turmeric ½ spoons
  • Lime 1 piece
  • Basmati rice 20 oz
  • Butter 0 oz
  • Saffron a pinch
  • Yogurt powder 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

In a deep skillet, heat vegetable oil and clarified butter over medium heat.

Step 2

Sauté the sliced onions until they become soft.

Step 3

Add the thinly sliced beef to the saucepan and sauté it with the onions for fifteen minutes. Then, mix the meat and onions with lime zest, turmeric, salt, cinnamon, and ground black pepper, fry for another minute, and combine with the finely chopped tomatoes.

Step 4

Wait for the stew to come to a boil, then reduce the heat to low. Simmer for thirty minutes, after which add the beans, tomato paste, and lime juice, stir, and simmer for another thirty minutes.

Step 5

During these thirty minutes, you need to do the following: pour basmati rice into salted water up to two fingers deep, bring the water to a boil, reduce the heat to medium, cover with a lid, and cook the rice for twelve minutes. Then, add a pinch of saffron and butter to the rice. Stir the rice with the butter, yogurt, and saffron, bring it to a boil again, turn off the heat, and let it sit covered for another five minutes.

Step 6

Serve with the meat. On a separate plate. Or pour the sauce over the rice.
