Bean and Barley Patties
Ingredients
- Pearl barley ¼ cup
- White Beans 5 oz
- Sweet Pepper ½ piece
- Scallions 0 oz
- Carrot 5 oz
- White Cabbage 5 oz
- Breadcrumbs 2 tablespoons
- Olive Oil 4 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Cayenne Pepper a pinch
- Black Cumin (Cumin) 1 tablespoon
Step-by-Step Guide
Step 1
Pre-cook the red kidney beans or barley.
Step 2
Sauté the pepper, onion, carrot, and cabbage in a small amount of oil. Season to taste. Remove from heat when the carrot becomes soft and set aside.
Step 3
Blend the beans, then add the barley, vegetables, breadcrumbs, and a little olive oil. Season to taste and blend again.
Step 4
Form patties from the mixture and fry on both sides until golden brown.
Step 5
Serve as a main dish or in a burger with a slice of avocado, a little lime juice, and purple basil pesto (a handful of pine nuts + olive oil + purple basil + salt/pepper).
