  • Pearl barley 10 oz
  • Pumpkin 5 oz
  • Morels 15 oz
  • Onion 1 piece
  • Grated Pecorino Pepato Cheese 0 oz
  • Garlic 2 cloves
  • Butter 0 oz
  • Vegetable Oil 2 tablespoons
  • Chicken Broth 15 fl oz

Step-by-Step Guide

Step 1

Soak the barley overnight. Sauté the mushrooms beforehand.

Step 2

Dice the onion and finely chop the garlic. Sauté the onion with garlic in vegetable and butter until golden.

Step 3

Add the barley and simmer for 5–7 minutes, adding the broth in small portions.

Step 4

Add the finely chopped pumpkin to the pan and simmer for another 5 minutes.

Step 5

Then add the sautéed mushrooms and mix. Add the grated cheese and mix again.

Step 6

Turn off the heat and add the butter.
