  • Pearl barley 5 oz
  • Green Beans 5 oz
  • Pumpkin 5 oz
  • Onion 1 piece
  • Garlic 1 clove
  • Curry Powder to taste
  • Dill to taste
  • Parsley to taste

Step-by-Step Guide

Step 1

Rinse the pearl barley and let the water drain. In a hot skillet, toast the barley until it has a nutty aroma, then add water (2:1 ratio), bring to a boil, and simmer on low heat for 45-50 minutes until cooked. Keep an eye on the water level and add more if necessary.

Step 2

Finely chop the onion and garlic. Peel and dice the pumpkin into medium cubes. Sauté the onion, carrot, and garlic in a dry skillet, then add the pumpkin and beans, season with salt and pepper to taste, add curry powder, and simmer until cooked for 7-10 minutes, stirring occasionally. Add the cooked vegetables to the barley 3-5 minutes before it is done cooking, and simmer together. Sprinkle the finished barley with chopped herbs and serve.
