Barley stew with leeks, mushrooms, and greens
Ingredients
- Olive Oil 1 tablespoon
- Leek 2 stalks
- Fresh Mushrooms 10 oz
- Garlic 2 cloves
- Fresh Rose Hips 2¼ teaspoons
- Pearl barley 1 cup
- Crushed Tomatoes in Their Own Juice 15 oz
- Chicken Broth 4 cups
- Salt to taste
- Leafy Mustard 10 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a large pot over medium heat. Add the finely chopped leek, season with salt and pepper, and sauté until soft, about 5 minutes.
Step 2
Add the thinly sliced mushrooms, minced garlic, and rosemary. Slightly increase the heat and sauté for about 7 minutes, stirring, until the mushrooms are soft and browned.
Step 3
Add the tomatoes and stir for 1 minute.
Step 4
Then add the barley and pour in the broth. Bring to a boil, reduce the heat, cover, and cook until tender, about 20 minutes.
Step 5
Add the finely chopped greens and cook for another 1 minute. Then, if necessary, add more broth, cover, and cook for another 10 minutes.
