  • Pearl barley 5 oz
  • Young zucchini 20 oz
  • Onion 1 head
  • Tomatoes 2 pieces
  • Parsley to taste
  • Vegetable Oil 4 tablespoons
  • Salt to taste

Step-by-Step Guide

Step 1

Rinse the barley groats and soak them in cold water for 3–4 hours, then drain the water.

Step 2

Place the groats in a pot, add 3 cups of hot salted water, and cook until done in a preheated oven.

Step 3

Peel, wash, and finely chop the onion.

Step 4

Wash the zucchini, peel it, and cut it into small cubes.

Step 5

Wash the tomatoes, blanch them in boiling water, cool them in cold water, peel them, and cut into wedges.

Step 6

Mix the porridge with the vegetables, season with oil, add salt, and heat on low for 7–10 minutes.

Step 7

Before serving, sprinkle with chopped parsley.
