  • Pork Blood 10 oz
  • Pearl barley 1 cup
  • Onion 1 head
  • Clarified Butter 0 oz
  • Cilantro 1 bunch
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Wash and finely chop the herbs.

Step 2

Peel, wash, and slice the onion into half-rings.

Step 3

Rinse the pork, cut it into small pieces, season with salt, add the onion, and sauté in a pan with 30 g of oil, then pour in a little water and simmer until cooked.

Step 4

Sort the barley groats, rinse them, pour in hot water, and bring to a boil.

Step 5

Then drain the water, pour the groats with 3 cups of hot salted water, add the remaining oil, stir, cover with a lid, and cook in a preheated oven until ready.

Step 6

Mix the cooked porridge with the pork and herbs, season with pepper, and stir.
