  • Pearl barley 5 oz
  • Morels 17 pieces
  • Fat 3 tablespoons
  • Turnips 2 pieces
  • Onion 2 heads
  • Spices to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Slice the morels, rinse thoroughly with cold water, then pour boiling water over them and let them drain completely.

Step 2

Peel, wash, and slice the onion into half-rings, then sauté in fat.

Step 3

Add the mushrooms and sauté until their volume is reduced by about half.

Step 4

Wash, peel, and julienne the carrots, add them to the mushrooms, and sauté for 4–5 minutes, then pour in 2 cups of water.

Step 5

After boiling, add salt and spices.

Step 6

Thoroughly rinse the barley groats, add them to the pot, bring to a boil, and cook on low heat until done.
