Ingredients
- Barley Groats 2 cups
- Water 4 cups
- Kale 3 cups
- Grated Parmesan cheese 0 oz
- Olive Oil ½ cup
- Pine nuts ⅓ cup
- Lemon Zest ½ teaspoon
- Salt ½ teaspoon
- Red pepper flakes a pinch
Step-by-Step Guide
Step 1
Bring 4 cups of salted water to a boil in a small pot. Add the barley groats and cook until the grains are tender and the liquid is fully absorbed, about 20-30 minutes.
Step 2
While the porridge is cooking, blend the kale, Parmesan, and olive oil in a food processor. Then, with the processor running, add the pine nuts, lemon zest, salt, and red pepper flakes.
Step 3
Before serving, mix the pesto into the cooked porridge until the ingredients are evenly distributed, or garnish the porridge on a serving dish by placing 1-2 tablespoons of pesto on top.
