Description
Banosh with Cracklings
Ingredients
- Corn Grits 2 cups
- Sour Cream 0 lbs
- Semi-Smoked Sausage to taste
- Feta cheese to taste
- Dried Chinese mushrooms to taste
- Sugar to taste
- Salt to taste
Step-by-Step Guide
Step 1
Banosh is prepared in a cauldron or in a pot with thick walls.
Step 2
Bring the sour cream to a boil and gradually add the corn grits mixed with salt and sugar in a thin stream, stirring constantly with a wooden spoon in one direction.
Step 3
Continue stirring and cook the porridge until it thickens.
Step 4
Then reduce the heat and mash the porridge with a spoon until droplets of oil appear in the sour cream. The finished banosh should be as thick as semolina porridge and easily detach from the walls of the pot.
Step 5
The toppings for the banosh are prepared separately. Fry the diced bacon until crispy.
Step 6
Soak the mushrooms beforehand, then boil, chop them coarsely, and lightly fry in the fat left from the cracklings.
Step 7
Cut the feta cheese into cubes or grate it on a coarse grater.
Step 8
Serve the finished dish in layers, without mixing the ingredients: first the banosh, then the feta, cracklings, and mushrooms on top. Banosh is eaten without mixing, taking a little of each component.
