Description

Baltic Bream, Braised

Ingredients

  • Bream 2 pieces
  • Coarse Salt to taste
  • Fish Oil to taste
  • Sour Cream 5 oz
  • Mayonnaise 10 oz
  • Vegetable Oil to taste
  • Dill to taste
  • Wheat Flour to taste

Step-by-Step Guide

Step 1

Preheat the oven to 300°F.

Step 2

Clean the bream thoroughly, gut them, and cut into portion-sized pieces, about 4 pieces each.

Step 3

Wash the pieces, pat them dry with a paper towel, and place them on a cutting board.

Step 4

Salt and sprinkle with seasoning, turn them over, salt and sprinkle with seasoning again. In my opinion, it's not very difficult, but it's meditative.

Step 5

Place a frying pan over high heat.

Step 6

Dredge each piece of fish in flour.

Step 7

Fry the fish in vegetable oil until golden brown on each side. Deep frying is not important; color is key.

Step 8

Grease a deep baking tray with vegetable oil and place the fried fish in it.

Step 9

In a bowl, mix sour cream, mayonnaise, and dill. If it's too thick, dilute with water.

Step 10

Pour the mixture over the fish, cover with parchment paper, and place in the oven to braise for THREE hours.

Step 11

After 3 hours, all the pin bones in the fish will dissolve, and you can enjoy the delicacy without discomfort by removing the spine. The bony fish has turned into a delicacy.
